We don't sell caffeine.
We sell ninety seconds of quiet.
A bowl of A Coffee Store Website is a small, deliberate pause, leaf grown slow in the shade, ground slower on stone, whisked into a moment that belongs only to you.
Wazuka · Kyoto · first flush Grown in the shade,
gathered in the mist.
For the last twenty-one days before harvest, our tea is hidden from the sun. Starved of light, the leaf floods itself with chlorophyll and L-theanine, the source of matcha's deep jade colour and its calm, even lift.
We take only the first flush: the youngest, softest leaves of spring, hand-gathered from terraced hills above Wazuka.
Granite mill · 30g per hour Thirty grams an hour.
We don't rush stone.
Each leaf is de-veined, de-stemmed and slow-dried into tencha, then ground between two granite wheels turning barely faster than a clock's hand. Push the stone and you scorch the powder; we let it take its time.
What falls is impossibly fine: a powder you feel rather than see, vivid and weightless.
Four movements, ninety seconds.
Sift the powder
Press through a fine mesh so it dissolves without a single clump.
Pour at seventy
Water just off the boil, 70°C, poured down the side of the bowl.
Whisk in a W
Quick wrist, never circular, until a fine jade froth rises and holds.
Drink it warm
Two hands around the bowl. No phone. Ninety seconds that are only yours.
One leaf, three rituals.
